"How are you doing?" is (usually) really a greeting and not a question.
"Fine, thank you, and you?" is an acceptable reply in American English.

You can. It might be more idiomatic if you use the contraction "I'm"
instead of "I am". And it might be good manners to ask how the questioner
is doing in return.
I might respond to "How are you doing" (or as many of my fellow New Jersians
would ask it, "Howya doin'?") with any of:
Good.
Good. You?
I'm o.k. You?
I'm good. How are _you_ doing?
I'm fine.
I'm doing fine.
Never better.
I'm doing well.
I've been worse. [I wouldn't recommend this one for use by a non-native
speaker.]
