How do you normally ask a question about the CAPITALIZED part of that
sentence in these cases (marine area). I hesitate between these
alternatives:

This diver carries out UNDERWATER repair work.

1. WHICH repair work does this diver carry out?
2. WHAT repair work does this diver carry out?
3. WHAT KIND OF repair work does this diver carry out?

Pilotage is not compulsory for MERCHANT vessels.

1. WHAT KIIND OF vessels is pilotage not compulsory for?
2. WHAT vessels is pilotage not compulsory for?
3. WHICH vessels is pilotage not compulsory for?

The second mate fixed the SHIP'S position.

1. WHICH position did the second mate fix?
2. WHAT position did the second mate fix?

Are there any better questions?

For the sake of formality and simplicity you could stick with "which" for
all three.

For the first two you could ask "What type of..."
