Hello:

Would "a therapy" be equally good?

Therapy is not countable in its most common sense.  As some particulars are
given here, 'a therapy' could be defended  (in the same way 'wine' can
become '*a* robust red wine').  But no, in my opinion, it is not so good.
I cannot tell you exactly what it loses, but it loses something.

Thank you both.

In this context I'd understand "a therapy" to mean "a therapeutic
activity".

Mick Stranahan tied a white bucktail on his line and began casting
from the dock, a therapeutic activity that as a bonus would provide
 fresh snapper for dinner.
