By evening/by the evening

Given the choice just between the two, I'd use #1.  Given latitude to
change, I'd write "I'll finish the task by this evening".

1.  2 is understandable, but "by the evening" is only natural if
you're talking about the evening of a specific date, or something
like that.

#2 seens more idiomatic to me, but both are normal.

I would say "I'll finish the task by evening" (or, more likely, by
nightfall).
I said it the same way, without the "the", when I lived in America, as
did most people around me.

Either of these:
I'll finish [the task] by evening.
or
I'll finish [the task] by this evening.

The only way I'd say
"I'll finish the task by "the" evening" would be if I'm talking about a
future day.
