The earliest sign of abnormality will probably appear in days 7-10, but
sometimes will not appear until later than day 10.

That would be written 'between 7 and 10 days after'
That is my understanding of how British English would use the phrase.

0 to say infinity but more probable between days 7 to 10.Am I right?

The statement doesn't exclude days 0-7, but it would be unusual.
