Based on my well-developed and extensive knowledge in Electronics,
Applied Optics, Laser Technology, and Fiber Optic Technology, I would
like to propose my research in the following three directions:
-    Fiber Optic for medical applications
-    Laser Technology for medical applications.
-    Holography for medical applications
-    BioMEMS for medical applications

Thank you.

1. Electronics, Applied Optics, etc aren't proper nouns and don't need to be
capitalised. (It might be different if these were the exact names of courses
you had studied.)

2. You have listed four directions, not three.

I disagree.  The capitalisation here is appropriate.

However, the phrase "I would like to propose my research in the
following three directions" is clumsy, and the use of "directions" is
wrong.  I suggest:

"I propose research in the following areas:"

or, if it's what you meant

"I propose research in one of the following areas:"
