1) Which word is preferable in the begining of the second sentence: that or
this?
2) Is there something in the text that sounds unnatural?

I think "this" is the best word since it's referring to somehting near
at hand. I also think you should use "graphic user interface" (note the
spelling - not "graphical") before using the abbreviation "GUI".

While there are some sources that use "graphic user interface", the
default reading of GUI is "graphical user interface":
M-W10 online:
Main Entry: GUI
Function: abbreviation
graphical user interface
in American English, at least. I've never read or heard anyone use
"graphic user interface" until today and I searched it on the Web.

What reason do you have for not allowing 'graphical'?

Simply a gut feeling. I have the feeling that adjectives of this sort
more usually end in "-ic" than "-ical", at least in their basic meaning,
e.g. "eocnomic" vs. "economical". Butr I'm quite prepared to be wrong.
In the German handbooks I have they always use just GUI anyway! ;-)
And I#ve always thought the most common adjective in this sort of
context was "graphic", but obviously not for GUI according to your
research. Well, that's life - always full of surprises.
