help with taste

Hi all:
I am trying to describe how a raw banana taste (or perhaps a raw
guava): in chinese there is a term that can describe it very well - its
like a texture more than a taste. A description of it is that it makes
your tongue less smooth and makes it harder (perhaps even drier) to
move around - thats the best way I can descrribe it!
-however I cannot find an english equivalent for it. I've been asking
people I know, everybody seem to know what I am talking about but no
one seem to know the word for it!

Any help will be greatly appreciated by me as well as some of the
people I know!

Perhaps "tart" is the word you're looking for.

It sounds like a whole series of descriptive vocabulary based on how one's
mouth physically reacts to different tastes, that just doesn't translate
more like.
