I am extremely confused as to when to use the written number in text or to
use the actually number.
An explanation of the differences would be appreciated.

Many news style books (Canadian Press for example) say:  "Write out numbers
below 10 and use figures for 10 and above."

Write out numbers at the beginning of sentences.

There are exceptions such as Richter scale readings, temperatures, times of
day,  military terms, monetary units, etc.
